There are several different styles of smokers including offset, water, barrel and so on, but the easiest and most consistent is an automated pellet smoker, and having used a lot of smokers, I recommend these unconditionally. They have an automated thermostat and burn food safe pellets made of real wood, available in all the same flavor enhancing varieties available for wood log burning smokers (and far more than for those using lump charcoal), mesquite, pecan, hickory and so on. In most parts of the country it is way easier to buy pellets than logs, and they are much easier to store. The only knock on pellet smokers come from old school purists who complain that they are too easy to use and let anyone make great BBQ. To me, that’s a benefit not a problem. In fact, I have both a high-quality traditional wood/ hardwood charcoal burning smoker and the pellet version (actually, two of them) and I almost never use the old fashioned one anymore. The results are just too good and easy with the pellet smoker – set it and forget it. No adding fuel and losing heat while doing so, no adjusting the venting and keeping an eye on the thermometer or monitoring the outside weather. Just the temperature you want, exactly and consistently, for hours and hours without any attention, and it’s easy to add fuel without affecting the temperature. But for most cooking, even a 6-8 hour rack of ribs, you probably wont have to add fuel. On a weekend I often start ribs late morning, go for a long bike ride or hike and come back hours later to flip and spritz. It doesn’t get easier than that.
